The Vinfinity W. B.T.G. Spoilage Calculator uses point of sale data from several major restaurants and sophisticated mathematical modeling to estimate wine spoilage based on the number of selections offered, glasses sold per month and number of days at which management considers an open wine unacceptable.

Assumptions:

• $10 average glass price,
• four glasses per bottle and a
• 25% average wine cost.

*Spoilage calculations in the With Vinfinity column assume a spoilage point of seven days, which is the most conservative scenario when the system is used as intended. In most cases, Vinfinity will keep wine fresh for up to 21 days.

Using Vinfinity

The Vinfinity Wine Preservation System is intuitive and requires little training. Running costs are negligible and the system requires no professional maintenance. Vinfinity® offers unlimited bottle capacity, takes up little space and is easy to retrofit into any existing restaurant or bar.

The Process
The Vinfinity® Wine Preservation System works on the concept of a Standing Central Vacuum. We call this patented process FlashVacuum®. This process makes it practical to protect every open wine bottle after every pour, no matter how big or busy the operation.

With a response time of less than two seconds, multiple locations and a preset vacuum level, the time and effort required to insure pristine quality in every wine glass is similar to that of using a soda gun to mix a drink. There is no limitation to the number of Vacuum Guns the system can support or their locations, and the system can be used simultaneously at multiple locations with no limitation on frequency.

The process is also highly visible and sends customers the message that the establishment cares about the quality of their wines by the glass. Since the bottles are not attached to the system, you can pour at the bar or even offer traditional tableside service, which assures the customer that they are getting the wine ordered, and the Vinfinity "pop" is a clear indication that the wines are being kept in pristine condition.
