It's often assumed that wines by the glass turn over fast enough not to spoil. While this may be true for some wines, many may take multiple days to turn over and the larger the selection the bigger the problem. The higher your average bottle cost, the greater the loss. Wine spoilage is a continuum rather than a tipping point, but quality begins to suffer within hours in most cases. Given that every wine by the glass is likely to remain open at the end of the night, almost every wine will suffer in quality. The number of days along the spoilage continuum at which you're no longer willing to sell a wine is your Spoilage Point.

Using field POS data, we've determined a typical wine by the glass sales distribution curve and created a mathematical model to determine theoretical monthly spoilage. By entering your own data and spoilage criteria into the Vinfinity Spoilage Calculator, it will estimate the number of glasses lost or sold beyond your spoilage point. To get an estimate for spoilage loss using the Vinfinity® system, use a spoilage point of between 7 and 21 days.
